So I started with a few inches of water in a pot over heat and waited for the heat to form air bubbles, but not to simmer or boil.
It is apparent after a ton of reading that there is great debate on whether or not to use vinegar in the poaching process. For this run, I decided to leave the vinegar out, swirl the water, pour the egg, and hope for the best.
And I really started to feel like Julia when the egg white turned into a stringy mess in the pan. Maybe it would recover. Then, DJ called me and asked for a waffle and I lost track of time. Whoops.
Yeah, let's just call that first one a fail.
So, pot of water back on the heat, close-to-but-not-simmering, added a splash of vinegar this time, carefully poured the egg into the center of swirling water, and focused.focused.focused. Focusing is difficult for me. I even set the timer even though I was standing.right.there.
And perfect! Yum. Now, I'm not much of a breakfast person, but now that I know how to poach an egg successfully, I will be eating these little babies for breakfast more often for sure!
I followed several tutorials, but had the most success from Smitten Kitchen's tutorial.
